The Paloma is Mexico's everyday favorite. The Alebrije dresses it up — Aperol for a bitter edge, ginger beer for the finish.

Method
Run a lime wedge around half the rim of a highball or double rocks glass; dip in salt. Fill with ice.
Shake the tequila, Aperol, lime, and agave hard with ice.
Strain into the glass, pour in the grapefruit soda, and crown with a splash of ginger beer.
Garnish and serve. Salud.
